What does it take to win at the Jack Daniel's
World Championship Invitational Barbecue
Contest?

First, you've got to get yourself invited,
and to do that you need to be
the best of the best in your state.
Big Daddy's Bar-B-Q earned the right to compete
in the "Jack" by winning the Alaska
State BBQ Grand Championship.

Next,
you assemble
a crew of the best BBQ
cooks
in the
land, or in this case, the Groetsema
brothers
from
Washington, Alaska, New Jersey
and North
Carolina.
This is a family
that
knows
their BBQ. |

Setting up the cooking area is important,
as bragging rights extend far beyond
just the food. |

And then there is the parade, balloons to
pass out to the kids, funny moose hats, and
a Jack Daniel's reception that fed the several
hundreds of us. |

All festivities
aside,
the real work begins.
Smokers
are stoked
and maintained to their
critical
temperatures
for the slow, slow
cook
that
must be timed critically. |

As the all night vigil turns to day,
onlookers watch as we prepare
our presentation for the judges. |
